The good stuff never leaves Japan
Singapore's Japanese aisle is deep in national brands and shallow in everything else. The same soy sauce, the same vinegar, the same dashi — shipped widely because volume is predictable.
Meanwhile there are thousands of small makers across Japan producing extraordinary things at a scale no large importer can be bothered with. A shoyu brewery in a town of four thousand people. A yuzu koshō a family in Kyushu has spent three generations perfecting. They have never exported, because nobody has ever asked them to.
We ask them. Then we show you what to do with what they make.

We don't just describe our finds. We cook with them on stream, answer your questions while we cook, and you decide from there.
